采后果蔬低温贮藏冷害、发生机理及控制研究进展

摘要: 传统家用电冰箱为果蔬提供了冷藏环境,可以延缓果蔬的成熟、衰老,为用户带来极大的生活便利。但许多热带、亚热带的果蔬对低温敏感,在冰箱的冷藏环境下贮藏一段时间后可能会出现冷害症状,如表皮呈现水渍状或冷害褐斑、果肉褐变、甚至严重腐烂,从而极大降低果蔬的食用品质。本文阐述了采后果蔬冷害的基本症状特征,综述了冷害发生的机理,探讨了冷害控制技术的研究与进展。希望通过将采后果蔬冷害的研究与控制可以与冰箱产业相结合,发展新型保鲜电冰箱,最终可以为消费者提供高品质食材的解决方案。

Abstract: Conventional refrigerators provide a good preservation environment with low temperature for fruits and vegetables. It can delay the ripeness of postharvest fruits and vegetables and provide a huge convenience to customers. However, many tropical and subtropical fruits and vegetables are sensitive to the refrigerating temperature, and they will show chilling injury after storage in refrigerators for quite a while, such as skin watery and/or browning spot, pulp browning, and even rot, which significantly reduces the edible quality. This paper reviewed the research progress of the symptoms of chilling injury, occurrence mechanisms and controlling methods. By combining the studies and control methods of chilling injury of postharvest fruits and vegetables and the refrigerator industry, we expect to develop a new preservation refrigerator and provide a good solution for customers to obtain the high quality of fruits and vegetables.
