摘要: 在外加磁场的情况下,食材会发生一系列的生理变化。其主要作用机理为磁场改变酶的活性;磁场会影响果蔬在呼吸代谢中的电子传递,直接导致呼吸代谢下降;磁场会导致微生物代谢活动紊乱,降低食材腐败,达到保鲜效果。本文以冰箱为载体,实验研究磁场技术在冰箱中应用时对于果蔬保鲜效果的影响,确定磁场最佳的作用条件。

Abstract: In the case of external magnetic field, a series of physiological changes occur in the food material. The main mechanism is that the magnetic field changes the binding state of enzyme with water, also the magnetic field can affect the electron transfer in the respiratory metabolism of fruits and vegetables, which directly results in the decrease of respiratory metabolism, Magnetic field will lead to disturbance of microbial metabolic activity, reduce the corruption of food materials, and achieve the effect of keeping fresh. achieve the preservation of fruits and vegetables. In this paper, the influence of magnetic field technology on fruit and vegetable preservation was studied by using refrigerator as carrier, finally confirm the best condition of the magnetic field.
