智能自熟感知和控制技术在电烤箱上研究与应用

摘要: 随着物质生活水平提升和对健康关注,消费者不再仅仅考虑饱腹,更追求如何吃得味美营养健康。近几年,满足舌尖味蕾的美食烘焙不断流行,很多用户入手了烤箱,如何做到食材成熟度智能感知和控制,不仅成熟即停,还能锁住色、香、味健康口感,成为行业技术难题。针对用户痛点,对食材成熟度感知与控制创新设计,进行原理构思,在腔体设置氧传感装置,重点对面点成熟过程介质气味收集,并建立CAE分析及控制逻辑模型,经过分组反复测试,结果表明,通过对氧气浓度变化智能感知来控制电烤箱的负载加热,做到成熟即停。该智能感知和控制技术在电烤箱上研究应用,有效解决用户烤制面点夹生或焦糊难题,提升烘焙厨艺体验美感,并引领智能生活潮流。

Abstract: With the improvement of material living standard and the attention to health, consumers no longer think about satiety, but also pursue how to eat delicious, nutritious and healthy. In recent years, the gourmet baking that satisfies the taste buds of the tongue has become increasingly popular. Many people have started to use the oven. In order to achieve the intelligent perception and control of food material maturity, which can not only stop when it is mature, but also lock the color, fragrance and healthy taste, has become a technical problem in the industry. On the basis of dealing with users’ problems, we have innovatively designed the control of ingredients maturity perception. Oxygen sensing device is set in cavity. It can collect the smell across the food maturation medium, and establish the CAE analysis and control logic model. After repeated tests in groups, it shows that the load of electric oven heating can be regulated through the intellisense based on the oxygen concentration change. The food can be stopped heating when it has been mature, which makes it come true. The intelligent perception and control technology that is applied to the research on the electric oven, can effectively solve the problem of baking or burning, improve the aesthetic feeling of baking experience, and lead the trend of intelligent life.
