酒柜中交变电场处理对于葡萄酒品质影响分析

摘要: 新酿葡萄酒需要催陈处理才能实现酒体的成熟,常规的催陈处理包括温湿度控制、防震、避光等,催陈后其风味和色泽明显改善,但该方式人工成本高、存储时间长,且催陈后价格高昂。前期研究发现:葡萄酒在交变电场条件下处理,酒体色泽及口感会发生变化,且不同电场强度及处理时间会导致明显的差异。为了确定电场条件下葡萄酒适宜的催陈条件,本文通过在酒柜中设交变电场装置,在特定的温湿度条件下,通过控制电场处理强度以及处理时间,分析葡萄酒口感成分以及呈色物质等指标的变化。最终确定电场适宜处理条件为:50 Hz条件下,100 V~400 V条件下处理5天。

Abstract: The new wine needs to require aging processing to achieve the mature. The conventional aging treatment includes temperature and humidity control, shock prevention, light avoidance, etc. Its flavor and color after aging are significantly improved, but the method has high labor cost, long storage time, and the price is high after aging. Early research found that the wine under the condition of the alternating substation field treatment, the wine body color and taste will change, and different electric field intensity and processing time will lead to obvious differences. In order to determine the suitable aging conditions of wine under the electric field conditions, the composition and contents of the wine control the changes under specific temperature and humidity conditions. Final treatment conditions for electric field: 5 days at 100 V~400 V at 50 Hz.
