某双风扇对流烤箱温度场均匀性研究

摘要: 强制对流烤箱作为一种常见的烘焙工具,其温度场的均匀性是衡量其性能的重要指标,通过对某双风扇对流烤箱温度场均匀性的研究发现:(1)用特氟龙块模拟食物,仿真得到的方差和实验测得的极差吻合较好,可用来反映腔体的温度场均匀性;(2)对比单风扇腔体温度场的均匀性,双风扇同顺时针旋转可提升30%左右;(3)双风扇左顺右逆旋转比双风扇同顺时针旋转腔体中心升温速度提升17%左右,且双风扇左顺右逆旋转时,腔体中心区域的热量聚集可加速烹饪体积较大的食材。

Abstract: Forced convection oven as a common baking tool, the uniformity of temperature field is an important index to measure its performance. Through the study of the uniformity of the temperature field of a dual fan convection oven, finds that: (1) Using Teflon blocks to simulate food, the variance of simulation is in good agreement with the experimental range, which can be used to reflect the temperature field uniformity of cavity; (2) Compared with the uniformity of temperature field of single fan cavity, the clockwise rotation of dual fans can increase about 30%; (3) In the dual fan cavity, left fan rotates clockwise and right fan rotates counterclockwise, the heating rate of the center of the cavity is increased by 17% compared with dual fans rotate clockwise. In addition, when left fan rotates clockwise and right fan rotates counterclockwise, the heat accumulation in the center area of the cavity can accelerate the cooking of large-volume food.
