机械损伤、温度与时间对电饭锅内胆金属迁移风险的影响

The impact of mechanical damage, temperature, and time on metal migration risk in rice cooker inner pots

摘要: 为了评估铝基特氟龙涂层电饭锅中金属元素的迁移风险,实验选取12批次样品,采用电感耦合等离子体质谱法(ICP-MS)对其中的13种金属元素迁移量进行测定。实验发现:在涂层完整状态下,13种监测元素迁移量均处于低风险水平;而机械损伤造成轻微划痕后,铝迁移量急剧升高,增幅最高达240倍;当涂层严重脱落时,所有样品铝迁移量均超出国标对食品接触材料铝及铝合金制品的限值(5 mg/L),钴、镍、铜等元素也出现超标。此外,干烧实验证实高温会加速涂层分解从而显著促进金属溶出,而酸性环境下迁移量随时间的延长先快速增加后趋于稳定。结果表明,涂层完整性是控制风险的关键,机械损伤、高温及长时间使用会大幅提升迁移水平。研究为产品的安全设计与使用规范提供了重要依据。

Abstract: To assess the migration risk of metal elements in aluminum-based Teflon-coated rice cookers, 12 batches of samples were analyzed via inductively coupled plasma mass spectrometry (ICP-MS) for 13 target metals. Results showed that all 13 elements exhibited low migration levels with intact coatings; however, slight mechanical scratches caused a drastic 240-fold maximum increase in aluminum migration. Severe coating peeling led to aluminum migration exceeding the national standard limit (5 mg/L) for food-contact aluminum products, with cobalt, nickel, and copper also exceeding limits. Dry-heating experiments confirmed that high temperature accelerates coating decomposition and metal leaching. Under acidic conditions, migration increased rapidly initially and then stabilized with prolonged exposure. This study indicates coating integrity is critical for risk control, while mechanical damage, high temperature, and long-term use significantly elevate migration levels, providing an important basis for product safety design and usage specifications.
