冰箱温湿度及波动对果蔬长效保鲜的影响研究

Study on the influence of refrigerator temperature and humidity and fluctuation on the long-term preservation of fruits and vegetables

摘要: 介绍了冰箱内温湿度变化规律,在不同的温湿度波动情况下,果蔬生理变化过程,以及对果蔬贮藏品质的影响机理。选取菠菜和蓝莓为试验对象,在冰箱不同的温湿度及其波动情况下,对其失水率、烂果率、维生素C含量、感官进行研究,结果表明:带包装的果蔬同时在冰箱贮藏时,温度2~4℃之间、温度波动小于±0.5℃、相对湿度70%左右,可获得良好的贮藏效果。对冰箱贮藏空间的温度及其波动进行严格控制,而适当降低湿度平均值有利于带包装果蔬长期贮藏。

Abstract: By introducing the change law of temperature and humidity in the refrigerator, the physiological change process of fruit and vegetable, and the influence mechanism of fruit and vegetable storage quality under different temperature and humidity fluctuations. Select spinach and blueberries as the test object, in the refrigerator of different temperature and humidity and fluctuation, the water loss rate, rotten fruit rate, vitamin C content, sensory, the results show that: the packaging of fruits and vegetables in the refrigerator storage, temperature between 2~4℃, temperature fluctuation is less than ±0.5℃, relative humidity about 70%, can obtain good storage effect. The temperature and its fluctuation of the refrigerator storage space are strictly controlled, and the appropriate reduction of the average humidity is conducive to the long-term storage of packaged fruits and vegetables.
