智控余水技术在食材健康新鲜蒸方面的研究与应用

Research and application of intelligent control residual water technology in healthy fresh steaming of food materials

摘要: 近年来,随着饮食多样化发展,人们的健康意识提升,保持本真滋味,留住原鲜营养的电蒸箱进入千家万户。用户烹饪时,蒸汽冷凝在内腔底部形成大量余水,长期易滋生细菌,对健康带来不良影响。通过创新设计烹饪过程余水自动回收机理,主要设计有过滤系统、防返味系统和配置专业水泵排水系统,并搭建模型功能样机,设计程序逻辑对余水排放智能控制,并对无余水食材蒸制烹饪进行对比验证测试,创新形成智控余水技术智慧烹饪系统装备。结果表明,该智控余水技术在蒸箱上应用研究,不仅有效防止含有烹饪杂质余水再次蒸发造成食材串味,保障健康新鲜蒸制品质,而且解决手动难清理余水之劳,提升用户体验满意美誉度,促进智能厨电市场绿色健康发展。

Abstract: In recent years, with the diversified development of diet, people's health awareness has been improved. The electric steam oven that keep the true taste and retain the original fresh nutrition enter thousands of households. When the user cooks, the steam condenses to form a large amount of residual water at the bottom of the inner cavity, which is easy to breed bacteria for a long time and has adverse effects on health. Through innovative design more than cooking water automatic recovery mechanism, main design system with filtration system, prevent return flavour and configuration professional pump drainage system, and building model functional prototypes, design the program logic to the residual water discharge of intelligent control, and built the model functional prototype, designed the program logic to control the discharge of surplus water intelligently, and carried out comparative verification and testing on the cooking of food materials with no surplus water, and innovatively formed the intelligent control of surplus water technology and intelligent cooking system equipment. The results show that the application of the intelligent control of residual water technology in the steaming oven not only effectively prevents the residual water containing cooking impurities from evaporating again and causing the taste of food materials, ensuring the quality of healthy and fresh steaming, but also solve the difficulty of manual cleaning of residual water, improve user experience satisfaction and reputation, and promote the green and healthy development of intelligent kitchen electric market.
