摘要: 磁场辅助保鲜技术是一项新型的食材保鲜方法,具有无毒害、食材营养保持率高等优点。现有研究表明,磁场对生物体的活性和水的相变过程的影响确切存在,但是关于其作用机理及影响规律尚未有一致观点。从冷藏、冷冻两个储藏条件出发,总结分析了现阶段已有的理论研究和应用技术成果,并对磁场辅助保鲜的未来应用于发展做出了展望。

Abstract: Magnetic field assisted preservation technology is a new type of food preservation method. It has been widely concerned by academic and industrial field due to its advantages of non-toxic and high nutrient retention rate. Previous studies have shown that the effect of magnetic field on the activity of organisms and the phase transition process of water does exist, but there is no consensus on its mechanism and influence law. The theoretical research and application of magnetic field assisted preservation technology were summarized and analyzed, and the future development was prospected.
